Our skilled whisky making team optimise the right mix of European and American sherry seasoned oak casks to allow the delicate and indulgent flavours of American oak to take centre stage while the more traditional Macallan characteristics of rich fruits, sherry and wood spice provide a reassuringly familiar backdrop.

Full of symbolism linked to Scotland's Hogmanay celebrations on the 31st of December and the 'first footing' tradition, where it's good luck for the first person welcomed into your home after midnight to bring whisky, shortbread and coal. There are shortbread notes aplenty in this Highland single malt, coming through from bourbon barrels, and sweet festive spice from sherry seasoned American and European oak casks. In the quest to discover sustainable packaging, discarded coffee husks have been given a second lease of life to create this innovative presentation box which encases a unique whisky. Whisky maker Steven Bremner has taken inspiration from the Arabica coffee and developed a whisky aged in both European and American oak casks which delivers notes reminiscent of a divinely sweet yet strong espresso. This limited annual release series brings together innovative sustainable packaging techniques with natural materials at the end of their life to see them given new use and purpose. With a distinct coffee flavour, this whisky exudes notes of espresso, dark chocolate and sweet oak. The intensely flavoured single malt invites you to immerse yourself in a sensory journey through flavour and aroma.

Cù Bòcan Creation #4, Tawny Port + Cognac Casks. Cù Bòcan's fourth Creation is a nod to The Antrim Cocktail, marrying two of Europe's most revered drinks, Port and Cognac. The end result is a medley of plum jam, grilled peach, stewed forest fruit, cinnamon and sweet campfire smoke.

Cù Bòcan Signature: Bourbon, Oloroso Sherry + North American Virgin Oak Casks. In the whisky that made Cù Bòcan's name, light smoke intertwines with rich citrus and exotic spices. Subtly smoky, surprisingly sweet, it opens up the world of lightly peated whisky.

When Tomatin Distillery was established in 1897, the isolated and idyllic setting of Tomatin was almost perfect. However there wasn't a local workforce; the local inhabitants were scattered shepherds and cattle drovers. The company began a project of construction to accommodate its workforce. Since that time the distillery has been at the heart of the community and the community at the heart of the distillery. This legacy has continued and Tomatin remains one of the few distilleries to provide a home for its dedicated craftsmen. Time in Bourbon barrels and Virgin Oak casks brings a light sweetness to The Tomatin Legacy, a non-peaty scotch which boasts aromas of vanilla bean, white chocolate and cinnamon. On the palate gentle waves of fresh fruit peppered with ginger emerge ahead of a light, clean finish.
