Chocolate, Cassis and mint flavours on the nose. These flavours carry over to the palate with he addition of ripe berry flavours. The parcels of premium Barossa Cabernet Sauvignon used in this wine were open fermented before being gently pressed and racked to barrel.

Rich, dark berry fruit and earthy complexity with lifted notes of sandalwood, cedar, violets, florals thyme and a hint of vanilla. A dense, weighty wine kept in check by firm tannin and gentle acidity with dives exceptional length across the palate. While approachable now, this wine will age positively for 15 plus years if cellared well.

Blends of Merlot and Cabernet Sauvignon are one of the most challenging and exciting wine styles to produce. There is a synergy between these two varieties that produces some of the most complete, complex, fragrant and satisfying styles of red wine in the world. Hawke's Bay, along with parts of the California's Napa Valley, was identified by the U.K's Decanter magazine, as one of the few New World wine regions that could challenge Bordeaux in the production of such wines.

On the nose, is a complex amalgam of dark berry fruit, cassis and roasted cocoa bean, lifted by more fragrant aromas of cedar, sandalwood and hints of dried lavender and thyme. The palate is full bodied with firm but fine-grained tannin and great length.

Cool Woods wines are made to be enjoyed with friends and family - the wines are sourced from their own cool climate vineyards, and supplemented with fruit from other well-known South Australian grape growing regions. South Australia produces many of Australia's most respected Cabernet Sauvignon wines and much of this has to do with climate and soil conditions throughout the states winemaking regions. Cool climate sites such as some of their high altitude vineyards tend to produce wines showing mint and eucalypt type character, whilst warmer regions in the state tend to produce rich berry characters in the fruit.

Intense dark colour red with purple edge. Ripe blackberry and blueberry characters, cedar-wood and liquorice. Soft, rich, mouth coating, balanced tannin, hints of classic Cabernet, authentically Heathcote.

A deep dark colour with brilliant purple hues. The bouquet is rich in blackcurrants with hints of chocolate and aniseed followed by dark berry fruits on the palate. The wine is superbly balanced with soft silky tannins on the finish.

Intense red with purple hues. Full bodied with dense ripe cassis fruit flavours balanced with vanillin oak but yet long and smooth. Try with char grilled sirloin or a heart minestrone. This wine has the flavour, structure and balance to be enjoyed now or offers added satisfaction from further cellaring.

The palate offers dark fruits and vanilla with notes of liquorice.
