Central Otago's cool climate consistently produces exceptional red fruit flavours of cherry, raspberry and redcurrant, but with concentration and length to match. This wine is layered with black and red berry fruits, complemented by blossoming aromas of dark plum.

Deep ruby red in colour with aromas of black cherries, subtle coffee crème, redcurrants and dark plums. The palate is intense and immediately mouth-filling with sweet plums and toasty notes. Elegant and powerful, the wine displays fine tannins but with great acidity that gives the wine freshness. Charming and extremely enjoyable now and will age in the bottle well for years to come.

The consumer market demand has been growing steadily for No Added Preservative and Natural wines. As leaders in organic production, it was obvious that Paxton needed a product for this category. In addition to Natural & Organic, they wanted to make a young, drink NOW style of Shiraz that was different from their existing Shiraz styles. 100% Shiraz. Colour: vibrant purple & pink. Aroma: ironstone, cold smoke & raspberries. Palate: medium-bodied, gravelly tannins offset by a delicate acidity with a smooth finish. Drink 'NOW'.

A lifted and expressive nose of red and dark-berried fruit, autumn leaves and brown spice such as clove and nutmeg wrapped pulled together by fine oak. The palate is medium bodied and shows delicious berries, spice and fine but firming tannin structure. This is a lovely wine of brightness, lifted fruit and plenty of drive but finishing savoury and long.

Being finished in well-aged Irish whiskey barrels adds subtle flavours to this Cabernet Sauvignon without changing the essential characteristics of the grape.

The use of aged Scotch whisky barrels in the finishing of this classic Barossa Shiraz has given the wine additional layers of complexity and smoothness, which combine elegantly with the rich varietal plum, fruit cake and chocolate notes.
